Uttar Pradesh is emerging as a national leader in value-added dairy products derived from indigenous cow breeds, with a pioneering initiative linking cow conservation, advanced dairy technology, rural employment, and national service. A premium dairy supplement known as Skyr, produced from the milk of indigenous cows using advanced Danish and Icelandic dairy technologies, is gaining popularity among Indian Army personnel for its high nutritional value and potential health benefits.

According to officials, the product is rich in high-quality protein, low in fat, and packed with essential nutrients, making it a suitable dietary supplement for soldiers. The freeze-dried Skyr yogurt powder and other related dairy products are being promoted as nutrition-rich foods that may help support immunity, muscle strength, and sustained energy levels.

Cow-Based Economy Emerging as New Growth Model

Additional Chief Secretary, Animal Husbandry Department, Mukesh Meshram, said that under the leadership of Chief Minister Yogi Adityanath, Uttar Pradesh has developed a cow-based economic model that is contributing to the vision of an self-reliant India.

He noted that the state’s efforts in indigenous cattle conservation and value-added dairy production are creating new opportunities for farmers, entrepreneurs, and rural communities while strengthening the dairy sector.

Indigenous Breeds at the Centre of Innovation

A key contributor to the initiative is Engineer S.N. Dwivedi of Prayagraj, who has established an advanced dairy facility in Noida housing more than 250 indigenous cows, including the renowned Gir and Sahiwal breeds. Milk from these breeds is known for its nutritional richness and is being used to manufacture a range of premium dairy products.

The product portfolio includes Skyr, Greek yogurt, gelato ice cream, Skyr powder, yogurt powder, paneer, and ghee. The use of modern ultra-filtration technology and advanced processing methods has enabled the production of high-protein dairy products that meet premium quality standards.

Ancient Icelandic Product, Modern Indian Application

Skyr is a traditional Icelandic dairy product with a history dating back nearly a millennium. Often described as a cross between yogurt and cheese, it is known for its creamy texture, mild tanginess, high protein content, and low fat levels.

For the first time in Uttar Pradesh, Skyr is being produced using Denmark’s advanced dairy filtration technology combined with Icelandic processing techniques. Industry observers say this innovation has helped position Uttar Pradesh as a significant player in the premium dairy segment.

Expansion Plans and Rural Employment

Dwivedi is now developing a modern cattle facility in Aligarh with a capacity of 500 indigenous cows. He said that encouragement received from Chief Minister Yogi Adityanath inspired him to expand his efforts in cow welfare, conservation, and dairy entrepreneurship.

The initiative has become a model for integrating traditional livestock practices with modern technology. Besides promoting indigenous cattle breeds, it is generating employment opportunities and creating new income streams for rural communities through value-added dairy products.

National Recognition for Cow Conservation Efforts

Chairman of the Uttar Pradesh Gau Seva Aayog, Shyam Bihari Gupta, said that the state’s cow conservation initiatives are producing tangible results. He highlighted the role of modern cowsheds, advanced dairy technologies, digital marketing, and innovative cow-based products in giving Uttar Pradesh a distinct identity in the dairy sector.

He added that the supply of nutritious dairy products to the Indian Army has connected cow welfare initiatives with a larger national purpose while simultaneously strengthening the rural economy.

Strengthening Self-Reliance Through Dairy Innovation

Officials believe that Uttar Pradesh’s indigenous cow-based dairy model demonstrates how traditional livestock resources can be leveraged through modern technology to generate economic growth, support rural livelihoods, and create high-value products for specialized markets.

With increasing demand for premium dairy products and continued investment in indigenous cattle conservation, the state is positioning itself as a hub for dairy innovation while advancing the broader goal of building a self-reliant rural economy.
