Prime Minister Narendra Modi concluded his two-nation visit to France and Slovakia on Friday, during which he attended the key G7 Summit and engaged in high-stakes diplomatic discussions with world leaders.
Apart from Prime Minister Modi’s face-to-face meeting with U.S. President Donald Trump –– which emerged as the highlight of the G7 Summit –– his presentation of thoughtful gifts to the world leaders also drew significant attention, reflecting India’s rich cultural heritage.
Among the gifts presented by PM Modi to the leaders, Bihar’s dish Thekua stood out. Thekua –– a traditional Bihari dish –– was gifted by the Prime Minister to the Speaker of Slovakia, Richard Rasi.
What’s Special About Thekua?
A traditional sweet dish from the states of Bihar and Jharkhand, Thekua is prepared using wheat flour, jaggery or sugar, ghee, and fennel seeds.
The dish is typically prepared during festivals, particularly Chhath Puja, which is one of the most prominent festivals in Bihar, dedicated to the worship of the Sun God and Chhathi Maiya.
Thekua is renowned for its long shelf-life, distinctive sweet taste, and the cultural essence of Bihar that it carries along.
How To Prepare Thekua?
Ingredients
Whole wheat flour (Atta): Two cups
Jaggery (Gur): One cup, finely grated or crushed
Ghee (Clarified butter): Four tablespoons
Fennel seeds (Saunf): One teaspoon
Cardamom powder (Elaichi): Half teaspoon
Dry coconut: One-fourth cup, thinly chopped or grated (optional)
Water: Half cup
Ghee or Oil: For deep frying
To Prepare Sweetener
Mix the grated jaggery and a half of a cup of water in a pan over low heat. Stir it continuously until the jaggery melts down completely.
Strain the syrup to filter out any physical impurities. Let it cool down.
To Make Flour
Combine the wheat flour, fennel seeds, cardamom powder, and coconut pieces in a large bowl. Pour four tablespoons of ghee into the mixture.
Rub the flour and ghee tightly between your palms until it starts resembling breadcrumbs. Pour the jaggery syrup into the flour in small increments.
To Prepare Dough
Gently form the mixture into a rough dough. Pinch out small portions and press them firmly into round or elongated leaf shapes.
You can use wooden moulds to give shape to your Thekua. After this, take the shaped pieces and deep fry them in oil or ghee over medium heat.
