Varanasi: The city recorded 42.3 degree Celsius on Thursday, while the minimum temperature was 24.2 degree Celsius. But, beating the scorching summer heat in Varanasi is a cherished ritual, often accomplished through the city's rich, creamy and cooling traditional beverages - thandai and lassi.
Served in traditional kulhads (terracotta cups) that add a distinct, earthy aroma, these drinks are staples in the narrow, bustling alleys and near the ghats, offering a much-needed, refreshing respite.“During peak summer in Varanasi, nothing beats the cooling effect of Banarasi thandai and lassi. These aren’t just drinks — they’re part of the city’s culture and daily rhythm,” said Ram Bilash Singh, an elderly resident of Jai Prakash Nagar colony.Banarasi thandai is a rich, chilled milk-based drink blended with almonds, fennel seeds, rose petals, melon seeds, black pepper, cardamom and saffron. It’s known for its cooling properties and mildly spiced sweetness. Best enjoyed in the afternoon heat — it genuinely helps with dehydration and fatigue.Banarasi lassi is thick, creamy yogurt blended with sugar and topped generously with malai (cream), dry fruits, or even fruit flavors. It is served in traditional clay cups (kulhads), which enhance flavour.
